Chole (Chickpea Curry

It’s amazing how much more energy I have when the weather cools; yesterday was nearly 80°F and I had to force myself to work through my list of to-do’s, but as the temperatures dropped once again, we slept well, we awoke rested and energetic, and I ended up adding things to my list, for the sheer joy of feeling like doing things.

A new recipe – for me, for us – Chole – is bubbling in our crock pot. It sounded so good! I found the recipe – I think on allrecipes.com – several months ago, but today is the perfect day to put it all together. It has so many things in it which are good for us, but especially chick peas, tomatoes, ginger and turmeric.

I had no idea what it would look like, but it looks like things we used to eat at the vegetarian restaurant Greenland, down in Souk Mubarakiyya, in Kuwait. I think it is missing a few spices, probably things we have a hard time getting here. It wasn’t even easy just finding mustard seeds, if I had needed those dried lemons or other spices exotic to Pensacola, I couldn’t have attempted it. This Chole won’t be the same as the delicious, spicy, complex dishes our Indian quilters would bring to the weekly stitch meetings, but it will be a good tasty dinner on a rainy night. I wish we had the fried Indian breads that Wikipedia says are traditionally served with it.

Chole (Chickpea Stew)

• 2 cups of chickpeas soaked overnight
• 3 cloves garlic, minced
• 1 large onion, minced
• 1 red bell pepper, minced
• 2 14 oz can of diced tomatoes
• 1-inch piece ginger, minced
• 1 14 oz can of coconut milk
• 1/2 tsp cayenne pepper
• 1 tsp coriander powder
• 1/2 tsp turmeric
• 1/2 tsp ground cardamom
• 1/2 tsp ground cloves
• 1 tbsp vegetable oil
• 1 tsp garam masala
• 1.5 tsp mustard seeds
• 1/2 tsp salt

DIRECTIONS:
Blend all the ingredients but chickpeas in a food processor or a blender until liquid. Wash and drain chickpeas, place them in a slow cooker, pour the blended mixture over and cook on low for 6-7 hours or on high for 4-5.

Make ahead: we usually make double or triple of this recipe, since we love it.  Let it cool, and store chole in freezer-safe zip-lock bags in the freezer for up to 6 months.

Just for fun, I am going to share with you the Wikipedia version. I laugh to think how intimidated I would be –

Preparation

preparation time=45mins cooking time=1hour serves=4

Ingredients For the chole 1 cup kabuli chana (white chick peas), soaked overnight 1 tea bag or tsp tea leaves, tied in a muslin cloth (optional) 1/2 tsp cumin seeds (jeera) 1 onion, finely chopped 12 mm (1/2″) piece of ginger (adrak), grated 2 cloves of garlic (lehsun), grated 2 tsp chole masala 2 tsp chilli powder 2 tsp dried mango powder (amchur) 1/4 tsp turmeric powder (haldi) 1 tbsp coriander (dhania) powder 1 tsp cumin seeds (jeera) powder 2 tbsp oil salt to taste

For the bhature 1/2 cup plain flour (maida) 1/2 cup potatoes, boiled and grated 1 1/2 tsp oil salt to taste oil for deep-frying

For serving 1 onion, sliced 4 lemon wedge

Recipe For the chole Pressure cook the Kabuli chana with the tea bag for 3 whistles until they are soft . Drain and keep aside. Discard the tea bag. Heat the oil in a pan, add the cumin seeds. When the seeds crackle, add the onion, ginger and garlic and sauté till the onion is golden brown. Add the chole masala, chilli powder, amchur, turmeric powder, coriander powder, cumin seed powder and salt and sauté for another minute. Add the Kabuli chana and 1 cup of water and mix well. Simmer for 10 to 15 minutes. Keep aside

For the bhature Combine the flour, potato, 1½ teaspoons of oil and salt and knead into a firm dough without using any water. Knead the dough very well till it is smooth Cover with a wet muslin cloth and rest the dough for 10 minutes Divide the dough into 4 equal parts and roll out into circles of 125 mm. (5″) diameter. Deep fry in hot oil till the bhaturas puff up and both sides are golden brown. Serve hot with the chole, sliced onion and lemon wedges. Tips While frying the bhature, press the centre lightly with a frying spoon so as to help it to puff up. Chole masala is a blend of spices which is readily available at most grocery stores. [2]

LOL, cook with a tea bag for three whistles??? I am already way out of my league! And “Chole masala is a blend of spices which is readily available at most grocery stores” does not apply to Pensacola, Florida!

Luxurious Blessing

I was making a salad to go with today’s lunch and remembered AdventureMan warning me we were just about out of roasted pecans, and needed more. It is a cool – almost cold – rainy rainy day in Pensacola, a perfect day for cranking up the oven to roast some pecans. We still have a wealth of pecans from a generous donation made by my dear daughter-in-law’s Texas aunt, who has a heart as big as Texas.

As I roast the pecans (425°F for about 10 minutes) the house becomes fragrant with that luxurious smell. I am transported back to Kuwait, where I remember paying a fortune for a small packet of pecans I needed to bake a pecan pie. Normally, we didn’t even bother looking at the prices, but the price on those pecans was so high I really had to think about buying them, it’s like paying an extortionist. But I needed pecans. I paid.

Now, we have this luxurious blessing of pecans, and not just pecans, but these fresh, fragrant, tasty Texas pecans, and as they roast, they are blessing my entire house with a rich roasty fragrance. It doesn’t take much to make me happy. This wonderful aunt gave us this wealth of pecans, and the gift just keeps on giving and giving, through the Christmas season, well into January – and we still have pecans left. I’ve paid a lot more and gotten a lot less joy from a purchase. I think of this wonderful woman and her gift every time we use them.

Yes, I roasted a lot of pecans, because we sprinkle them on all kinds of things, and that roasted flavor just enriches everything they touch. Yes, they keep in an air-tight container, for as long as it takes for us to eat them, which can be two or three weeks.

It’s another luxurious blessing. About twelve years ago, when we had a posting in Germany, we packed everything into storage and just bought what we needed to live with. As days go by, however, you – or I, anyway – just need a few little things to make life nice. You pick up a few gorgeous dessert plates here, a few Christmas ornaments there . . . some cookie sheets, just a little extra, and before you know it, life is no longer so simple. To help keep it simple, I mostly bought things I could just leave behind when we left the country to head to the next country, or I transported things home in those big bags we used to be able to take on the transoceanic flights. I ended up having to rent a storage locker in Seattle for all the treasures I accumulated in our second round of overseas living, LOL.

The first year we were living once again in Germany, as we were buying some wardrobe units, I spotted two salad / serving bowls at IKEA. They aren’t costly porcelain, they are just ceramic bowls, but I love the shape, and inside each one are two beautiful purply-blue irises. I looked at them and loved their conception, their design. I pointed them out to AdventureMan, and then promptly forgot them. Because he is a very smart man, I found them under the Christmas tree a few months later, and was thrilled to recognize them. We have both treasured them ever since.

With each subsequent move, I carefully wrapped those bowls and used them again and again at each posting. We pull them out all the time, these bowls are a perfect size for a salad-to-share or a side dish, and to this day, they look like new. It makes me laugh; I’ve had much more expensive dishes which were not so long for this world; these are go-to serving bowls, and still look brand new.

So today I am feeling extraordinarily thankful for the great luxury of pecans, the wonderful aroma of their roasting, and the great blessing of serving them in a bowl which gives us joy every time we use them.

Saudi Students Flock to US Universities

When I was student teaching in EFL/ESL, my Arab Gulf students often complained that they couldn’t go directly to US universities, that they had to take English classes first.

“How did you do on the TOEFL?” I would ask, and their response would be a combination of anger and sheepishness.

“They all think we are rich. They just want our money. They make us take classes we don’t need, just to make money on us,” they would bitterly complain.

Most of these guys could speak passable English. Their writing skills were almost non-existent. They weren’t ready for real universities, with standards and accountability. The very first thing – and this is cultural, not something that is “right” is being ON TIME.

We don’t even realize what a priority it is in our own culture to be where we are supposed to be at the time we are supposed to be there. To be habitually late is to be morally inferior in some undefined way, lazy, a slacker. It’s custom, it’s cultural, it’s not a universal. But if you’re going to go to school in the United States, you need to respect the need to be on time – especially for things like exams, boarding a flight, when a paper is due, paying a bill by the due date.

We all learn when we confront our own assumptions by knocking up against another culture. I learned a lot about my own erroneous assumptions living in Saudi Arabia. I hope they are learning as much here. I wish these students well. I hope some of the students are Saudi girls; I hope they are driving around Pensacola having a good old time.

Saudi students flood U.S. colleges for English lessons

FREDERICKSBURG, Va. — That University of South Carolina cap on Meshari Albishi’s head? Just for looks, he says. Its colors match the red of his vest, where a metallic pin displays flags for the United States and Saudi Arabia, his homeland.

For now, his allegiance is to the University of Mary Washington, which Albishi says “is like my second home.”

Technically, Albishi is not a student here, but he has made “a lot of friends,” and has access to the library, workout rooms and other campus facilities. The university has offered him admission, on one condition: Before he can enroll, he must complete a non-credit program, called English for Academic Purposes.

Albishi, 25, is one of thousands of international students arriving each year in the United States to study English as the first step toward a college degree. They come from all over the world, but Saudi Arabia, where the government has poured billions of dollars into a generous scholarship program, is driving the recent surge.

In just seven years, Saudi student enrollments have skyrocketed from 11,116 in 2006, to 71,026 last year, according to the Saudi Arabian Cultural Mission to the United States, the Virginia-based agency that administers the scholarship. Nearly all recipients (95%) start with language training, which can take anywhere from a month to a year or more, officials say.

The infusion of full-paying international students has been a boon for cash-strapped U.S. colleges.

For instance, Western Michigan University in Kalamazoo, which founded its Center for English Language and Culture for International Students 38 years ago, enrolled a record 267 international students last semester, nearly half from Saudi Arabia, says center director Diana Vreeland. The University of Dayton’s language center, established in 2006 with eight students, now enrolls 400.

The Saudi scholarship grew out of a meeting in 2005 between Crown Prince (now King) Abdullah, and President George W. Bush as a way to strengthen ties — and ease tensions — between the two countries in the wake of the 2001 terrorist attacks.

Saudi scholarship students can receive up to a five-year visa. The scholarship covers full tuition, housing and health benefits for students and family members. All that, plus round-trip tickets home once a year. After language training, business and engineering are the top fields of study.

When students are finished, “they come back with a collective experience that can help move the country forward,” says Mody Alkhalaf, the Saudi Arabian mission’s assistant attaché for cultural and social affairs.

Even so, the arrangement doesn’t sit well with skeptics, who argue for stricter visa policies. Fifteen of the 19 hijackers in the Sept. 11 attacks were from Saudi Arabia; and several had entered the USA with student visas.

In 2011, after a Saudi engineering student was charged in a failed plot to bomb U.S. targets, Investor’s Business Daily repeated its concern that a new initiative for Saudi students opened the door for terrorist attacks. “How many will overstay their visas and become sleeper agents?”

Programs for international students have recently come under greater federal scrutiny. In 2010, Congress tightened rules for English-language programs after an investigation found that a for-profit language school in Florida served as a front for the sale of fraudulent student visa applications. Last year, a federal report urged U.S. Immigration and Customs Enforcement to strengthen oversight of the Homeland Security program that oversees compliance with a student-visa system. Recently, immigration officials have raised concerns that some colleges might be mishandling documentation for students accepted into an academic program on the condition that they first complete language studies.

Some schools mention only the academic degree program on federal forms, a practice that is “essentially defrauding the immigration requirements” and potentially “defeating the purpose” of a student tracking system, says Ernestine Fobbs, a spokeswoman for Immigration and Customs Enforcement.

ELS Educational Services, a for-profit company that operates the center housed at the University of Mary Washington, lists language study on its paperwork, says communications director John Nicholson, based in Princeton, N.J.

No language students have continued their academic studies at the University of Mary Washington. But officials say they value the diversity such students bring to campus. Last semester, Arabic studies professor Maysoon Al-Sayed Ahmad organized a regular coffee hour for Saudi and U.S. students. “I wanted American students to change their idea about what they think about the Arab people, so they can become friends,” she says.

Saudi students have similarly had their eyes opened. Until he arrived on campus, “I thought all (Americans) had guns,” says Abdullah Khalid Maghrabi, 19. He stayed indoors for a week before he thought it was safe to go outside. Now, he says, weather is a more pressing concern.

“I don’t know what to wear every morning. In my country, all the seasons are the same — it’s hot.”

WOW! New YMCA For Pensacola in Maritime Park?

A $5 million pledge by Quint and Rishy Studer has kick-started a drive to build a new downtown Pensacola YMCA on a waterfront site at Community Maritime Park.

Studer said this afternoon he is interested in seeing a new YMCA downtown because of the positive impact it can have on children and adults, on community health and on residential development in the downtown area.

Studer said his pledge is contingent on the YMCA being located on a waterfront site at the southwest corner of the park, and that the project move forward at a rapid pace.

“We told them (the YMCA board) if they are serious, this has to move quickly,” Studer said. “Emotionally, Rishy and I can’t take another long, drawn-out things like with the stadium. We can’t take getting beat up again.”

Studer said the YMCA project, tentatively estimated at about $10 million, would be an excellent fit for the Maritime Park.
“There is a vacant piece of property there and either there’s going to be nothing on it, or a private developer will build something, or there can be a YMCA there.”

Brian Hooper, chair of Mayor Ashton Hayward’s Urban Development Advisory Committee, said a new YMCA in the downtown area was a key recommendation of the report released last month.

“One of the most common suggestions we heard from the public was the strong desire to see a family-oriented community center downtown,” Hooper said. “As our final report recommended, a new YMCA in downtown Pensacola would provide those who live and work in the community with a centrally-located hub for recreation, wellness, learning, and community. And I’m excited to see that many of our recommendations — such as this one — are already being acted upon.”

In addition to Studer’s pledge, community benefactor Terri Levin said she is co-chairing the YMCA fundraising committee.

Levin also said she will be making a dollar pledge to the project but has not yet decided the amount.

Pensacola developer Eric Nickelsen and real estate developer Joe Buehler are co-chairing the steering committee.

Nickelsen said the 10-person, all-volunteer YMCA steering committee, which includes former Mayor Mike Wiggins and former Pensacola City Councilman Ron Townsend, is meeting later this month to recommend a site to the Y’s board of directors. It’s
expected the recommended site will be the CMPA’s waterfront parcel.

Nickelsen said the YMCA project is in the early stages of development, but has considerable momentum.

“Apparently there is good feeling among our committee members that we can be successful in our fund raising campaign,” Nickelsen said.

French Intercede to Save Mali

It’s like people in the US don’t get news of countries like Mali unless they really seek it out. French troops continue operation against Mali Islamists

French Defence Minister Jean-Yves Le Drian said army units had attacked a column of rebels heading towards the central town of Mopti.

He also revealed that a French pilot had been killed in fighting on Friday.

The French troops deployed on Friday after Mali’s army lost control of a strategically important town.

Mali’s government said its forces had recaptured the town, Konna, after the air strikes, but it was not clear if all Islamist fighters had left the area.

‘Terrorist state’
Armed groups, some linked to al-Qaeda, took control of the whole of northern Mali in April.

They have sought to enforce an extreme interpretation of Islamic law in the area.

Regional and Western governments have expressed growing concern about the security threat from extremists and organised crime.

Mr Le Drian said on Saturday that hundreds of French troops were involved in the military operation in Mali.

The minister said Paris had decided to act urgently to stop the Islamist offensive, which threatened to create “a terrorist state at the doorstep of France and Europe”.

He also revealed that a French pilot was killed in Friday’s fighting – during an air raid to support Mali’s ground troops in the battle for Konna.

“During this intense combat, one of our pilots… was fatally wounded,” the minister said.

Speaking on Friday, French President Francois Hollande said the intervention complied with international law and had been agreed with Malian interim President Dioncounda Traore.

It would last “as long as necessary”, Mr Hollande said.

French officials gave few operational details.

Residents in Mopti, just south of Konna, told the BBC they had seen French troops helping Malian forces prepare for a counter-offensive against the Islamists.

Mr Traore declared a state of emergency across Mali, which he said would remain in place for an initial period of 10 days.

He used a televised address to call on Malians to unite and “free every inch” of the country.

‘Crusader intervention’
The west African bloc Ecowas said it was authorising the immediate deployment of troops to Mali “to help the Malian army defend its territorial integrity”.

UN Secretary-General Ban Ki-moon says the situation in Mali is becoming increasingly volatile
The UN had previously approved plans to send some 3,000 African troops to Mali to recapture the north if no political solution could be found, but that intervention was not expected to happen until September.

French Foreign Minister Laurent Fabius said the aim of the operation was to stop Islamist militants advancing any further.

It was not clear how far the French would go in helping Mali’s government retake territory in the north.

At least seven French hostages are currently being held in the region, and Mr Fabius said France would “do everything” to save them.

A spokesman for al-Qaeda in the Islamic Maghreb (AQIM) said he considered the French operation a “Crusader intervention”, and told France it would be “would be digging the tombs of [its] sons” if the operation continued, according to the Mauritania-based Sahara Media website.

France ruled Mali as a colony until 1960.

January Garden in Pensacola

AdventureMan, half way to his goal of becoming a Master Gardener, spent the last week cleaning out the pots and gardens in back, but couldn’t bear to get rid of these two valiant tomato plants which continue bearing well into January. We’ve had delicious tomatoes since August! Who know we would live in a place where you plant tomato seeds in June and continue to have fresh tomatoes growing into January?

We also have a wonderful aloe plant, which got a little confused in the warmth of a couple days of December and sent up a flower. The first year we were here, the flowers came up in April, but Spring seems to be coming earlier and earlier . . .

We’re having a little tree work done, and AdventureMan is studying pruning techniques, so as to judiciously and minimally trim back some of our fruit trees, and clear some of the dead branches off our huge oak tree. I’ve got two avocado trees that I’ve grown from seeds, in large pots now, and some basil plants that still appear to be doing well. I still remember the hedges made of basil, which grew year round in Qatar at the Ramada Hotel, and in Kuwait would go dormant during the brutal heat of summer but come roaring back once the heat moderated.

Epiphany and The Star of the East at Christ Church in Pensacola

“Pay attention!” AdventureMan nudged me, hard. I was trying to find the Star of the East that Father Neal Goldsborough had just pointed out on our Christ Church dome, but I couldn’t find it. And I WAS listening, I was paying attention, I just also wanted to see the star, the special star on our dome, signifying the star that the wise men followed to find the child Christ.

I see a lot of other heads swiveled to look up, searching the dome for that special star. It’s one of my favorite feasts of the year, Epiphany; I can hear those camels grumbling and sputtering as they clop across the hard roads, I can feel the bite of the cold in the deserts (yes, in the winter deserts can be bone-freezing cold), and I can imagine the wise man consulting as to exactly where that star is leading.

Later after the service, a kind Christ Church parishoner shows us where the star is – painted with more gold, shining brightly just over the horizon in the dome of Christ Church. It is beautiful, subtle, and it makes me happy to know that one star is special.

Fresh Market Opens In Pensacola

People have been excited ever since the announcement was made that Fresh Markets was opening a store in Pensacola. Although it is one of the smaller Fresh Markets, if there is anything carried by Fresh Market that is not in Pensacola, and you want it, they can bring it in for you. 🙂

It’s a wonderful shopping experience. Think about it – we live like kings, better than the nobility of medieval Europe. We have indoor plumbing (if you’ve ever had to use an outhouse in a cold country like Alaska, you will have a greater appreciation for indoor plumbing all your life), we have hot water, we have heat and air conditioning, we have more than enough clothing for any season. We live so high on the hog as to be wasteful and oblivious to our own wastefulness. Oops, I digress.

We have access to abundant fresh food. Even without Fresh Market, we have markets with clean, fresh vegetables, fresh sanitary meats and poultry, and goods in – and out – of season.

What is the height of luxury? Service. Beautiful displays. People who know their product and talk about it lovingly. It’s kind of like Disney does groceries; it’s a lot of fantasy, and probably a level of goods that goes beyond need into just-a-little-over-the-top, but isn’t it the nature of being a human to be looking for something novel and just a little better than the product you loved last week?

Fresh Market is a little like the Food Market at Herrod’s or Selfridges in London, all these little boutique-y spaces, with people who seem to love what they are doing and are happy to be of service. Publix does it well; Fresh Market takes it to a whole new level.

There is a very large section dedicated to quick foods – sandwiches made to order, prepared soups, salads, pizzas, cheeses, cold cuts, and deli items with lots of salads. We particularly loved the seafood display, and AdventureMan was mesmerized by the dessert selections.

All in all, Fresh Market makes grocery shopping less of a chore and more of a little vacation. For the best experience, get there on a week-day, or at opening – 0900 – on the week-end, so you don’t have to fight for parking in a crowded parking lot shared with the new Marshall’s, Ulta, Stein Mart, etc.

Second Day of the New Year

The first day of our New Year was a lot of fun – we had little Q overnight, so after breakfast he and I walked to a near by park while AdventureMan cooked up a big pot of Turkey Gumbo, accompanied by a salad that had apples and cranberries and a fabulous Roquefort dressing, our son and his wife came for lunch and picked up their son, and then we had a free afternoon. I started a new quilt, a complicated quilt, one that takes a lot of planning and a lot of cutting before I can even stitch the very first piece.

Then last night we watched District 9, a movie we had seen before. I always find it troubling, and I know I shouldn’t watch a movie like that which stirs me up, before I go to bed.

So today is the first normal day of the new year, I hit the pool for aqua aerobics and then I come home to do some more cutting for the quilt. I’ve been cutting all day. I still have more cutting to do. Aarrgh.

The good news is – it is my choice. I want to do more quilts, I want to make time. I want to do all the small work that goes into a truly grand quilt. It’s just tedious when you are in the middle of the preparation stages, and the light today is not bright, it is dark.

Maybe better light tomorrow. I am working with wonderful colors; colors of the desert and colors of the Arabian Gulf. 🙂
