Roasted Tomatoes
A friend brought me a huge bag of tomatoes, and also a serving of the same tomatoes roasted up – oh WOW. Roasting these already tasty tomatoes concentrates their flavor.
I serve them as a side dish. I add them to salads, and to salad dressings. I serve them as a salad with a little Balsamic vinegar. I add them to the spaghetti sauce. I make them into a roasted tomato soup, with basil (be sure to use real cream; it’s OK, it just makes the taste richer and more satisfying. If you are satisfied, you won’t eat more and the cream won’t make you fat. I promise.) They are like magic, anything they touch tastes wonderful.
Chop cherry tomatoes in half, bigger tomatoes into quarters. Place in a long flat pan (with sides; these get juicy at first) and spray with a really good olive oil and sprinke with sea salt.
Roast at 180°C / 350°F for 40 minutes, longer if you want less juice.
You will find it hard to resist eating them right out of the pan.


Roasted tomatoes are essential when you’re having the levantine BBQ (kebab, Tekka, Shish Tawok…etc) especially with the Tekka
am i the only one that thinks huge bags of tomatoe as a gift are a little odd?
i wouldnt know what to do with mine if i get any.

Kinan, I get so tired of tasteless tomatoes, that when people bring me tomatoes, and they taste so heavenly. The thought of them with lamb kebabs – oh! oh! oh! And then when you roast them to concentrate the flavor even more – oh Lord have mercy, I am in 7th Heaven. 🙂 (You don’t capitalize “levantine?” I thought it would be a proper adjective?)
nq – Hush yo mouf! Bags of tomatoes are the most special gift, they are a gift of special taste, and a gift of the labor of your hands and body, with the planting and weeding and harvesting. Fresh home grown tomatoes aren’t like store tomatoes, no, not at all. They taste really TOMATO-Y!! If any of your friends bring you bags of tomatoes, send them all over to me! Please! Or . . . roast them. Just give it a try. You might be surprised at how delicious they are.
